Polly Holloway

Polly Holloway grew up on a farm in Tasewell County, Virginia. After graduating from a two-room high school, she went on to Virginia Tech, where she earned a degree in Home Economics in 1956. After a brief career as an Assistant Extension Agent, she moved to Roanoke, where she taught Special Ed for Roanoke County Schools. She was soon persuaded to take on the role of Cafeteria Supervisor and credits her state agency with offering valuable training. She returned to Virginia Tech in 1972 and earned her Masters in Nutrition. By now a firm believer in the value of training, Holloway managed to get all of her Managers and many of her workers certified while overseeing thirty-two school nutrition programs in the Roanoke County School System. Polly retired in 2000.

Sophie C. Hoover

Sophie C. Hoover, a Brooklyn native, spent most of her formative years in Puerto Rico. After starting her college education in Puerto Rico she finished her degree in Nutrition and Dietetics at the University of Florida. After working as nutrition director for a nursing home, Sophie has been the Specialist in Food and Nutrition with Anne Arundel County, Maryland schools for twenty-seven years.

Saundra Isabelle

Saundra Isabelle started working part-time in child nutrition when her children started school, but immediately fell in love with it. She quickly rose through the ranks and became a manager at Pass Christian Elementary, Middle, and High Schools for five years. She is now the food service director for the Pass Christian School District.

Esther Izaak

Esther Izaak was born on the island of Montserrat, where she attended secondary school. She continued her education at the University of the Virgin Islands, as well as studying in the United Kingdom. After several years teaching, she accepted the position of the director of the School Food Authority for St. Thomas and St. John. She is now the training director for St. Croix, St. Thomas, and St. John.

Jane Jantz

Like many others who have made child nutrition into a career, Jane Jantz came to the profession in a roundabout way. She and her husband moved from California to Mississippi, where farmland is more affordable. She planned to work one year to tide them over from a bad crop – that was nineteen years ago, and Jane loves serving the children more each year as manager of the Okolona Elementary School cafeteria.

Jennifer Jennings

After a number of years in retail food service, Jennifer Jennings saw an ad for a food service director position in her native Wisconsin and applied. Surprised that she got the job, she knew she had a lot to learn about school food service and took advantage of all the classes available through her Department of Public Instruction, as well as becoming involved with the School Nutrition Association of Wisconsin. She has now been a director for six years.

A Wisconsin native, Ruth Jonen earned a degree in Dietetics at the University of Wisconsin – Stout, and then moved to Chicago. She has worked in school nutrition programs for almost 30 years, 27 of them in the suburban Cook County community in which she lives. Ruth served as School Nutrition Association President in 2005-2006.

Offie “Mama” Karnes was born and reared in Bedford, Virginia, where she attended a one-room school. After working for the American Viscose Company in the Food Service department, Mrs. Carnes went to work for Roanoke City Schools in 1959. Her salary then was 62¢ per hour. “Mama” Karnes credits excellent training in the Roanoke City system with enabling her to work her way up to Manager and having a very successful and rewarding thirty-year career with this school system.

A native Oxonian, Beth King has never lived anywhere else. King was educated in the Oxford, Mississippi, public schools before earning multiple bachelor’s and master’s degrees, and then taking a PhD from the University of Mississippi. She worked at the J.D. Williams Library for a number of years before being recruited to move to the National Food Service Management Institute, now the Institute of Child Nutrition, where she helped develop the Institute’s computer technology.

Charles Kirby

Mr. Kirby worked for the USDA for 25 years, which included serving as Southeast Regional Director for 15 years. Subsequently, he served as the State Director of Child Nutrition in Mississippi. During his tenure in Mississippi, he helped develop and operate a statewide purchasing cooperative for schools. Since retiring from Mississippi, he has provided consulting services in the area of purchasing and financial management to state and local school districts and the NFSMI.

Dianna Krebs has had an interesting path to school nutrition. After majoring in finance in college she worked as a bookkeeper, first at a bank, and then as the bookkeeper for her local school district, eventually becoming the bookkeeper for the child nutrition programs, where she rose through the ranks, becoming a coordinator, an assistant to the director, and finally the school nutrition director, where she currently supervises eighteen schools.

She has collaborated with the Indiana Department of Education, Indiana Grown for Schools, and various other stakeholders in procuring and serving local foods in schools. Becky likes to be involved in the many facets of Child Nutrition. She participates in and is a member of several committees committed to helping child nutrition professionals. She is also a consultant trainer for the Institute of Child Nutrition.

During 2022 the Child Nutrition Archives conducted multiple interviews investigating how child nutrition professionals dealt with the Covid 19 pandemic and its effects on the operations of school feeding programs. This interview examines the experiences of Becky Landes, who is a current Food Service Director for Manchester Community Schools in Indiana. For over 20 years, Becky has been in Child Nutrition. She holds a Level 4 Certificate from the School Nutrition Association and is pursuing a Bachelor’s degree in Business Administration and Management. Becky is involved in Farm to School in Indiana. Marcelle Landry

Marcelle Landry, a proud native of the French Quarter, served for many years with the Louisiana Department of Education as Assistant Director, School Food Services, before joining the Archdiocese of New Orleans as Supervisor of School Food Services. Though now retired, Mrs. Landry is still very active with the Louisiana School Food Service Association, of which she is a past president.

Peggy H. Lee

A Virginia native and graduate of Virginia Tech, Peggy H. Lee began her career in restaurant management, but soon switched to school food service. She first worked as a supervisor of twenty-two schools in the Norfolk school system and then became the nutritionist for Virginia Beach Schools. From Virginia Beach she moved to Norfolk as a supervisor and then took the director’s position in Chesapeake. After thirty years of service she retired and now works for the National Dairy Council.

Louise Lepeze

After several years of working as a nutritionist in hospitals Louise Lepeze joined the Louisiana Department of Education child nutrition programs as an Area Supervisor in 1980. She later became the Section Chief. Lepeze left the state in 1991 to join USDA at the Southwest Regional Office in Dallas as the Net Coordinator, Nutrition Education and Training Program. She has been back in Baton Rouge since 2005, working for USDA in the area of School Meals Initiative.

Ellen Leppa

Ellen Leppa, certified with the American Association of Family and Consumer Sciences and the School Nutrition Association, served as Education and Training Specialist and Coordinator of On-Site Services at the National Food Service Management Institute on the campus of the University of Mississippi until her retirement in 2008. As coordinator Ellen worked with both State Departments of Education and conference planners of School Nutrition Associations throughout the country to provide trainers for preconference classes, general sessions, educational sessions, workshops and seminars on a large variety of topics. Some of the topics include Developing a Food Safety Program, Emergency Readiness, Biosecurity Guidelines, Personnel Management, Financial Management, MyPyramid, Nutrition 101 and the Dietary Guidelines for Americans, 2005. She was the project coordinator for the Building Human Resource Management Skills training tool for food service managers, the Financial Management Course for School Food Service Directors and the development/publication of Mealtime Memo, a fact sheet for child care providers. Ellen has worked in Child Nutrition Programs for over 40 years both at school district and State levels.

Dr. Jane Logan, a Pennsylvania native, was educated at Indiana State College, Ohio University, and The Ohio State University, and spent her working career in Ohio, Maryland, Virginia, and Mississippi. She is a former Virginia State Director for the School Nutrition Programs, as well as a past Executive Director of the National Food Service Management Institute.

Beverly Lowe

Beverly Lowe is a registered dietitian and is certified by the School Nutrition Association (SNA) as a School Nutrition Specialist (SNS). She has served as a Cafeteria Manager, Nutrition Specialist, Food Service Director, and Consultant during her career in School Food Service. Beverly’s notable honors and accomplishments include USDA Best Practices Awards, IFMA Silver Plate Award as School Food Service Operator of the Year, Ivy Award from Restaurant & Institutions Magazine (only SFS Director), Outstanding Civilian Service Medal, Golden Star FAME Award, and many others. Beverly has provided training and technical assistance for numerous school districts and organizations. Her professional affiliations include the School Nutrition Association and the Virginia School Nutrition Association; she served as President of each. She is also a member of the American Dietetic Association and served as School Nutrition Chair.
Beverly is a consultant trainer for the National Food Service Management Institute.

Gaye Lynn MacDonald

Gaye Lynn MacDonald worked in the school nutrition program of Bellingham Public Schools in Bellingham, Washington for 32½ years, 20 years as the program director, overseeing 23 sites offering breakfast, lunch and after school snacks. In 2002-2003, she served as president of the American School Food Service Association, representing 54,000 members.

Wendy Mangiaracina is a New Orleans native with thirty-three years of experience in child nutrition programs. She chose Southwest Louisiana University for her post-secondary education, where she earned a Bachelor’s Degree in Dietetics. She later attended Tulane University and obtained a Master of Public Health degree. After a long and dedicated career Wendy retired in the summer of 2009. Doris Mau is a retired School Food Service Manager and a past president of the Oahu School Food Service Association. Mrs. Mau was President-elect of her association when Hawaii hosted the Annual National Convention in 1976. The youngest of Mrs. Mau’s three daughters followed her into the school food service profession and is currently a School Food Service Manager on Oahu.

Penny McConnell

Penny McConnell, a Canada native, had no experience in school nutrition until she moved to Virginia and took a job as food service manager in a local elementary school. McConnell has worked her way up through the Fairfax child nutrition programs, working as a manager in several high schools before becoming a supervisor, and eventually director of Food and Nutrition Services. She has also been active in the American Dietetic Association and the former American School Food Service Association, now the School Nutrition Association.

Susan McCranie is a retired child nutrition program director in Georgia. She came to child nutrition after working for the Georgia Extension Service, the Georgia Peanut Commission, and as a computer programmer, before joining the Georgia Department of Education as an area consultant, and finally becoming a food service director.

Clare Miller spent her career first working for the Louisiana State Department of Education as an Area Supervisor before becoming the Food Service Director for the Diocese of Lafayette. She then went to work for the United States Department of Agriculture in Washington, DC, from where she retired.

Nancy Miura is a retired School Food Service Manager and a past president of the Oahu School Food Service Association, having served several terms as president of the Oahu association.
